Then we offer you a recipe for incredibly fragrant banana bread, which takes only a few minutes to knead the dough. The secret: the less the dough is kneaded, the more delicious and tender the bread turns out! It looks like a cake in structure, but whatever you call it, it's definitely delicious!

Ingredients

  • 4 medium 4 ripe bananas

  • 1/3 cup 1/3 avocado or coconut oil

  • 1/2 1/2 - 1cup sugar

  • 1 3/4 cup 1 3/4 Flour

  • 1 tsp 1 baking powder

  • 1 tsp 1 baking soda

  • 1 tsp 1 cinnamon

  • 1/2 tsp 1/2 salt

Directions

  • Preheat the oven to 350F (or 180°C).
  • Line a 9 x 5 x 3-inch loaf pan with parchment paper and lightly grease it with oil.
  • In a large bowl, combine the flour, baking soda, baking powder, sugar, cinnamon, and salt.
  • In a small bowl, mash 2 bananas with a fork until only small pieces remain.
  • Combine mashed bananas with coconut oil, eggs, and vanilla extract and beat/mix well, scraping the mixture from the sides of the bowl.
  • Stir in the dry ingredients, being careful not to beat too long.
  • Spread the dough into the mold. Cut the last banana in half and put it on top of the dough.
  • Bake for 1 hour and 15 minutes until golden brown and the toothpick comes out dry (a toothpick inserted in the center of the loaf should come out clean).
  • Don't worry if the banana bread cracks in the center; that is how it should be.
  • Cool the bread in the pan for about 10 minutes, then flip it out onto a wire rack to cool completely. After that, the bread can be cut.
  • Toast slices of banana bread in a toaster (optional), sprinkle with powdered sugar and serve.
