Pork Medallions with Mushrooms

Ingredients

  • 1.5 pounds 1.5 pork (tenderloin)

  • 2 tbsp 2 butter

  • 2 tbsp 2 avocado oil

  • 1 cup 1 mushrooms

  • 1 1 white onion

  • 1/4 cup 1/4 cream

  • ground pepper to taste (mixture of peppers)

  • salt to taste

Directions

  • Wash the meat and pat dry it with paper towels. Cut the prepared pork tenderloin across the fibers into pieces 2 inches long. Foil: fold wide long strips of foil, wrap one piece of foil around each medallion, and twist the foil to secure it. Sprinkle both sides with the salt and pepper mixture. You can use any spices and dry herbs to taste.
  • Put the prepared pieces cut side up, and push on them to get rounded pieces (medallions). Set the pieces of meat in oil, reduce the temperature a little, do not cover with a lid, and fry for 3 minutes.
  • After 3-5 minutes, turn the pieces over to the other side and cook for another 3-5 minutes. Remove the pan with pork from the stove, cover with a lid and leave for 5 minutes. Pork tenderloin has very delicate fibers, so it does not need to be cooked for a long time.
  • While preparing the meat, peel the onion and slice it. Wash and cut the mushrooms.
  • Add butter to a separate pan, add onion and mushrooms, and heat on medium-high for 5 minutes until the mushrooms are soft and the onions are golden. Sprinkle the mushrooms and onions with flour and pour cream over it. Fry the mixture for 5 more minutes until the sauce starts to thicken.
  • Transfer the finished pork medallions to a plate, add mushrooms on a side, and serve immediately.
  • The meat is fully cooked but remains juicy and incredibly tender. It just melts in your mouth. The aroma and taste are amazing. Enjoy your meal!!!
