Protein Coffee Bites

Protein Coffee Bites are an innovative, delicious snack that is perfect for on-the-go snacking. I use these protein-rich coffee bites a lot when I need a quick pick-me-up for more energy and brain fuel. I try to limit my use of caffeine after 2-3 pm, but before 2 pm, I have no issues with coffee because, genetically, I have an intermediate metabolism of caffeine. If you believe you may be a slow metabolizer of caffeine, I would limit your coffee intake to 1 cup early in the morning… and definitely, no coffee protein bites!

There has been so much bad stuff about consuming coffee in the blogosphere. It is good to make sure your coffee does not have mold in it and is organic. We love small batches that the local coffee shops sell or Bulletproof brand.

Try making the same protein-rich bites with matcha green tea, but I was greatly disappointed because all the matcha powder went down to the bottom of the dish while it was in the fridge.


  • 3 cups brewed coffee (or Americano espresso, depending on your preference)

  • 1/2 cup cold water

  • 2 teaspoons monk fruit sweetener

  • 6 tablespoons grass-fed collagen

  • 3 tablespoons grass-fed gelatin

  • 2 tablespoons maple syrup or substitute with monk-fruit sweetener (I am not a fan of stevia aftertaste, but it is just a personal preference)

  • coconut sugar or monk-fruit sweetener for sprinkles


  • Add 1/2 cup of cold water to a bowl or liquid measuring cup and sprinkle with gelatin powder.
  • Whisk together to combine and allow to sit for 3-5 minutes to “bloom.”
  • Pour the remaining (3 cups) of coffee and sweetener into a medium saucepan. Heat over medium heat until almost boiling.
  • Remove from heat and add the bloomed water/gelatin mixture and collagen. Mix to dissolve, or use an immersion blender to mix the mixture.
  • Pour into an 8×8 glass baking dish.
  • Refrigerate for about 4 hours, or until set. Cut into pieces and sprinkle with coconut sugar or monk fruit sweetener.
