Provençal chicken is a delicious French dish that will not leave anyone indifferent, and all thanks to the unique Herbs de Provence. At the same time, the chicken has not only an appetizing aroma but also a very delicate taste.

Ingredients

  • 3-4 3-4 Chicken fillets or 4-6 boneless skinless chicken drumsticks

  • 1 jar 1 green olives with brine

  • 1/2 1/2 onion

  • 1 head 1 garlic

  • 2-3 2-3 medium Roma tomatoes

  • 5-10 5-10 cherry tomatoes (optional)

  • 1 1 Lemon

  • 3-4 3-4 medium potatoes

  • 1 tsp 1 Herbs de Provence

  • 2 tbsp 2 Olive oil

  • Salt and pepper to taste

Directions

  • Preheat the oven to 350 degrees.
  • Cut the garlic head across the cloves.
  • Fry the chicken in a heated pan, adding oil, until golden brown (this step is optional, it does add flavor to the chicken).
  • Put the chicken in a baking dish. Quarter potatoes, tomatoes, and slice white onion. Cut the garlic head across the cloves.
  • Slice the lemon into thin rings and top the chicken and vegetables. Pour the olive brine over the veggies and chicken.
  • Drizzle with olive oil, and add salt and pepper to taste. Sprinkle with herbs de Provence.
  • Cover the baking dish with foil and set into the preheated oven for 40 minutes.
  • Enjoy!
