Lemon STRAWBERRY Parfait

These strawberry lemon parfaits are a light and summery dessert that will please everyone! Whipped cream, macerated strawberries, and bright, tart lemon curd come together in individual servings for a delicious and easy-to-make treat.

How to Prepare:

  1. Start by sweetening the strawberries to bring out their flavor.
  2. Place the chopped strawberries into a bowl and toss with 2 tablespoons of sugar.
  3. Let sit at room temperature for 15 minutes to macerate.
  4. Meanwhile, prepare the whipped cream. Use a mixer with a whisk attachment to whip together 1 cup of heavy cream, sugar (or maple syrup), and the optional 1 teaspoon of pure vanilla extract. Whip until medium peaks form.
  5. To assemble the parfaits, start by placing a few pieces of cake or biscotti cookies into the bottom of the glasses or cups.
  6. Top with a dollop of lemon curd (see my homemade recipe HERE) and the strawberry mixture, including the juice they were macerating in.
  7. Add a layer of whipped cream, then repeat the layering once more.
  8. For decoration, you can top each glass with a fresh strawberry.
  9. If not serving immediately, store the parfaits in the refrigerator for several hours.
