Easy Natural Vegan Chocolate

Now in stores, you can find chocolate with any taste, even low-calorie, sugar-free, or vegan, but sometimes you want to present your friends or acquaintances with an unusual hand-made gift.
Delicious and beautifully designed chocolate, made with love in your kitchen, is a wonderful gift that will never go unnoticed.

It is hard to find soy-free chocolate at the stores because most of the brands have soy lecithin in them. Unfortunately, some children and adults are sensitive to soy. When I find soy-free chocolate, I understand how expensive it is too! It is definitely a treat if one cannot tolerate even such minute amounts of soy as soy-lecithin!
Also, most chocolate bars are produced on equipment that is processing dairy, gluten, and tree nuts. With an epidemic of food allergies to gluten, dairy, peanuts, and tree nuts, it is good to have a reliable alternative to store-bought chocolate.

Have you struggled with soy sensitivity or allergy? What was the most challenging, and which foods did you have to be very careful with?
So, let’s talk about how to make natural chocolate and please your loved ones!

Cocoa beans contain 300 biologically active substances that affect the functioning of the whole body, but are especially beneficial for the heart and blood vessels.
If you periodically enjoy natural chocolate, you can normalize blood pressure, strengthen memory and performance, protect yourself from stress and cheer yourself up, because this dessert stimulates the production of endorphins – the hormone of pleasure.
And to make the enjoyment as complete as possible, you need to cook truly delicious chocolate and buy high-quality products for this.
It’s definitely not worth saving on chocolate!
The minimum set of products for homemade chocolate consists of three ingredients – unrefined edible cocoa butter, grated cocoa beans, and sweetener.
You can give the chocolate a pleasant sweetness using sugar, honey, malt, jam, agave, or Jerusalem artichoke syrup (as well as any other syrups), sweeteners of all kinds and stripes, and even condensed milk.
For spice, you will also need spices and additives – nuts, berries, sesame seeds, flax seeds, pieces of dried fruit or candied fruit, cinnamon, vanilla, cardamom, nutmeg, citrus peel and coconut flakes, puffed rice balls, waffle or cracker crumbs.
You can also use butter, cocoa powder, powdered sugar, carob, milk powder, or regular milk, flour, coffee, and cream, depending on the recipe.
You can add a little chili pepper, mint, or sea salt to the chocolate – this is original and unusual!
Additional ingredients are ground in a blender or introduced into the chocolate mass in pieces.

Ingredients

  • 1 cup 1 cocoa butter

  • 5 Tbsp 5 raw honey (or maple syrup)

  • 1/2 cup 1/2 unsweetened cocoa powder

Directions

  • You can use any silicone mold you have. The key is not to pour the hot mix into them. So, wait till the chocolate reaches warm or room temperature. I used different ones for one (Walmart and Amazon carry a number of fun ones:)
  • Use a double boiler method to melt cocoa butter. I only use the microwave when I need to heat up a lavender neck wrap:)
  • In the first pan, add 2-3 inches of hot water and set the small dish with chopped cocoa butter inside of it into the hot water. Mix once in a while, but it should not take longer than 7-10 minutes to melt the cocoa butter into liquid.
  • Take the melted cocoa butter off the heat and if adding raw honey, wait for the cocoa butter to cool off a bit. Then mix cocoa powder and raw honey into warm cocoa butter.
  • Whisk until there are no clumps.
  • You can add more sweeteners if needed. Then the chocolate will be more on the dark side. You can also add more cocoa powder for a more bitter taste. I experimented with different options and liked dark chocolate more.
  • Pour the warm chocolate mixture into the silicone molds (no need to grease them!) and put the molds into the fridge.
  • Store in the refrigerator and use as needed 🙂 in moderation.
