Ingredients

  • 2 large yams or 1 large yam, not peeled

  • 1/2 pound red potatoes, scrubbed clean, with peel left on

  • 2 purple sweet potatoes, peeled

  • 1/3 cup extra virgin olive oil

  • 1 teaspoon salt

  • Pepper to taste

  • Preheat your oven to 400°F. Get out a large baking sheet and lightly coat it with olive oil.
  • Peel and chop your yams (orange sweet potatoes) and peel the purple sweet potatoes and cut them into 1½ inch chunks. Place everything into a large bowl.
  • Add the remaining oil, fresh thyme leaves, ground cumin, salt, and pepper to the bowl, stirring to make sure everything is well coated.
  • Transfer the contents of the bowl onto the baking sheet, ensuring that all the vegetables are spread out evenly. Add the rosemary sprigs and place in the oven.
